Puzzling

I seem to be running for a lot of buses lately. It happens a few times a day, at least. Is it me, or is it the buses? Puzzling.

Oh, and I somehow managed to get my earring out of the drain with those crazy magnets my mom lent me. Then my Better Half picked up the magnets while he was holding his cell phone, and you can imagine what happened. Hopefully his phone is working today.

At the request of Stegan, I'm going to post my Totally Awesome Tofu Recipe. This recipe is a complete guess, because I make up most of my cooking as I go. It's pretty hard to mess up though, so I'm sure you'll have fun with it. I like to eat this with stir fried broccoli. You can also heat the marinade in a pan after you use it, reduce it a bit, and then pour it over rice noodles. Mmmm.

1 block of firm tofu, cut into about 6 pieces (so they end up being nice rectangular steaks... no pun intended.)

Marinade:

1 cup of organic tamari sauce*
2 cloves of garlic, minced
3 tbs of honey or maple syrup
1/2 tsp of crushed chili flakes, cayenne or chipotle powder
1 tsp rosemary
2 tsp of red wine vinegar (feel free to use another good vinegar if you have a favourite)
1/4 cup water

Whisk together marinade ingredients until they are well combined. Place tofu pieces in a shallow dish or tupperware so that they are all flat against the bottom and can be mostly covered by the marinade. Pour marinade over the tofu, and let it soak for around 1 hour. If the marinade doesn't cover the tofu at all, you can flip the pieces after 30 minutes.

Once marinated, remove the tofu and place on a greased baking dish (make sure the tofu isn't dripping everywhere, or it will spit a bit when it goes in the oven). If you want, you can sprinkle grated romano cheese over each steak.

Cook in oven for 10-15 minutes at 350.

* You can also use Braggs or soy sauce.... But may I just say that after buying a bottle of organic tamari sauce, I have never gone back. Give it a try.

I make something just like this, except not in the oven because it just got too messy and I skip the soaking for an hour part because I never have that much time. So, I brown the tofu first in the skillet and then pour the marinade over the top with some water so the tofu is kind of floating. Then I put a lid on the skillet and let it simmer until all the liquid is absorbed and the tofu is coated in a nice layer of sauce. Also, I usually float a few slices of ginger with it - nice flavour and helps to digest the tofu better.

Very nice! Do you press the tofu first or serve it right out of the package? My method (a little time consuming, but tasty) is to take it out of the package when I get home from the store, put it in a colander with weight on top for about twenty minutes and then freeze. Then I defrost it when I'm ready and prep it pretty much like you do- the drain/freeze gives it such a delicious texture...

UP: Sounds awesome. I will try this soon. I never used to have time to marinate, until I realized that I could do some laundry, check my e-mail, tidy the kitchen and snack on chocolate almonds... And BAM! The hour was gone. So now I just get the tofu ready first.

Stegan: I keep meaning to try this, and I definitely will now. Sounds yummy. Tofu is so versatile!
