Lately, I've been making big long lists in my head. Also in my notebook, on my arm, hand, and on random receipts... But generally, they start in my head.

Mostly, the lists involve things I want to work towards. Little changes I want to start making. You know... Fiscal responsibility, more sleep, eating whole foods, blogging stuff and muffins.

Muffins might be the most crucial thing on these lists, the way I see it. I want to learn to make really good spelt muffins. Really good. I want to pop these muffins in the freezer, and have them ready for rushed mornings/evenings, snacks, and ammunition for when my Better Half pummels me with snowballs. It seems to me that mastering a great muffin recipe will help me achieve fiscal responsibility, more sleep, eating whole foods, and... Well, not the blogging thing, but maybe I could twist that around somehow.*

So. Does anyone have a killer muffin recipe? Not poisonous, per se, just delicious.

*I know. I would blog about my amazing muffins, and you would all laugh to yourselves and make jokes about how nobody really wants to hear about muffins, but secretly you'll be interested and try making them at home. And then we will achieve world peace and hold hands etc etc.

What do look for in a muffin? I was starting to say, 'What do you VALUE in a muffin?' That seemed a bit much!

Not at all! I value bananas and moistness.

Eeeew, bananas and moistness. That sounds so icky!

But it's true.

I like any muffin that doesn't fall to shit when I eat it. Sawdust muffins are the worst!

I have a recipe for the most awesome vegan pumpkin muffins if you like pumpkin? They're very moist and juicy and have some pumpkiny spices like nutmeg and cinnamon in them and raisins and they're not too sweet. I can hunt that down and send it over it sounds like something you might like??

I have a banana spelt muffin recipe!

1/2 cup soft butter
1 cup or less brown sugar
2 eggs, beaten
2 cups spelt flour
1 teaspoon aluminum-free baking soda
1/2 or less teaspoon of salt
2 or 3 ripe bananas, mashed
1/2 cup chopped almonds (optional)

Pre-heat oven to 350 degrees F. Cream butter and sugar;
add eggs and beat well. Add dry ingredients and finally bananas
and nuts. Mix well. Cook until toothpick comes out clean (about 20 min?)

I've tried regular old muffin recipes using orange juice instead of milk (and chunks of apple, if you're into that sort of thing) and they turned out deliciously moist.
